Maple Toasted Almonds and Oats recipe by Barefeet In The Kitchen

Lightly sweetened with maple syrup, these toasted oats and sliced almonds are a crunchy topping for yogurt, fruits or just about any breakfast cereal. So simple it barely qualifies as a granola, made only with three ingredients that are likely already in your pantry.

I’m not a big fan of plain yogurt, but with a sprinkling of this granola and a drizzle of maple syrup; I am happily eating this for breakfast.

I’ve made granola a number of different ways over the years. While I love snacking on a fully loaded granola with nuts and fruits and chewy clumps of oats, this is the one I keep going back to when I’m making it myself.

Maple Toasted Almonds and Oats

Ingredients 

  • 2 cups old fashioned rolled oats
  • 1/2 cups sliced almonds
  • pinch of kosher salt
  • ¼ - 1/3 cup maple syrup

Instructions

  • Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper. Stir together all ingredients to coat thoroughly. Spread across the parchment paper and bake for 15-18 minutes, stir the mixture after 10 minutes and spread across the tray again before returning to the oven. Let cool completely before transferring to an airtight container. Use as a topping on the yogurt or fruit combination of your choice. Enjoy!

    So easy to make, I used 1 cup chopped raw almonds, 1/4 cup shredded coconut, 1/2 tsp. sea salt instead of kosher, 1 tsp. vanilla, 1/2 cup maple syrup and 2 cups oats. So good with yogurt!4 stars
