After all of my baking this weekend, I wanted to post something healthier (and more colorful!). So, here is a shot of one of my vegetable boxes.

I keep containers of prepped and ready to eat veggies in the fridge and I keep a basket of cherry or grape tomatoes on the counter. I often set the veggies on the table before dinner, along with some hummus or ranch dip.

We all snack on it as dinner is being prepared. Everyone seems to stay happier and less grouchy through the 5 o’clock hour.

Side note: This is a huge help on those nights when dinner is running a bit later than usual.

Keeping fresh snacks on hand also helps keep lunch time simple for us all. I can put together Snack Trays in just minutes or toss a handful of veggies next to a sandwich without any extra effort at all.

An hour or so spent prepping fresh produce each week pays off greatly; as we are able to enjoy the ready-to-eat vegetables and fruits whenever we want them. And packing lunches so easy.

In addition to fresh vegetables my kids go nuts over these roasted chickpeas.
