I saw something similar to this while flipping through a magazine the other day. I couldn’t get it out of my head later, so I played with the ingredients I had on hand and I liked the result.
I think this is pretty close to the original recipe. (I have no idea what magazine I saw the original idea in though.)
My husband isn’t a huge fan of ginger and he enjoyed this. My middle son absolutely loved this. He’s requested it three times already (I saved the extra sauce in a jar in the refrigerator). If you like ginger and lime, you will likely love this dressing.
Watermelon with Ginger Lime Dressing
Ingredients
- 6 oz plain greek yogurt
- juice from one lime about 1 tablespoon
- 2 tablespoons honey
- 1/4 teaspoon freshly grated ginger
- Watermelon cut into bite size pieces
Instructions
- Whisk together the yogurt, lime, honey and ginger. Drizzle over the cut watermelon. Enjoy!

I ate a lot of Greek yoghurt on a recent vacation to Montreal and noticed in the stores that there are many variations in butterfat — many more than we have in our stores.
I mostly eat nonfat, but am interested in impressions on best brands and tastes. (I'm a Chiobani fan.)
Ever made Tzatziki (sp?) with it. Love that stuff, but I can't seem to master a good recipe for it. This is one situation in which a little more butterfat is probably good.

Jenn – I still think that watermelon is best on it's own. 😉 However, after my son went nuts over this, I decided to go ahead and post it. I liked it, but for me, plain is likely to always be best. This was just fun for a change.
Janeen – I WISH we could get full-fat greek yogurt here. I very rarely buy it, but when I do, I typically look for the most fat possible. The skim and fat free varieties often have random additives and stabilizers mixed into it. Making my own yogurt is on my future list as well. I'd love to come up with a great alternative that way!

this is great for summer, I love watermelon just plain even, so sweet and especially juicy! and agree with what you replied janeen, full-fat greek yogurt is the best! if you can;t find it, what you can do it simply strain normal full-fat plain yogurt till you get the thicker creamier consistency!
