While I am still on vacation until next week, I couldn’t resist a quick post to share a few of my favorite warm winter dishes as we start a fresh new year. If you are looking for more inspiration, there are over 600 additional recipes to browse in the Recipe Index.
Italian Red Wine Roast Beef has been a hit each time I make it. Made in the oven or in the crockpot, it is seasoned with a light blend of Italian spices and then cooked in red wine. The aroma of this roast slow cooking throughout the afternoon is so fantastic, it’s almost the best part of the meal.
Chicken Bits are loaded with great flavor and just a hint of spicy heat. This is a very easy meal, maybe 30 minutes start to finish and that includes letting the chicken rest for a while. I almost always serve this chicken with Roasted Potato Wedges and Po’dunk Sauce.
Spiced Apple Butter Pork Roast is a sweet and flavorful roast with an unexpected depth of flavor from a pinch of cayenne pepper. Served with potatoes, rice or simply with roasted vegetables this is a great winter meal.
Green Chile Stew with Sausage and Tomatoes is a flavorful stew filled with green chile, potatoes, hot sausage and tomatoes. Start to finish, this stew
only requires 30-40 minutes including prep time; making it a great
weeknight dinner.
Spicy Five Bean Chili with Steak and Sausage is packed full of tender steak, spicy sausage, five different varieties of beans,
tomatoes and green chili. This is my favorite rainy day meal. I love the way the aroma of the chili fills the house all day long.
Caramelized Onion, Bacon and Potato Frittata works for breakfast or dinner. With a salad on the side, a frittata is perfect for a light, warm dinner on the nights when I crave lighter food and want more than just a salad.
I’ve had a wonderful time playing in the snow this past week and I am looking forward to returning back to blogging on a daily basis next week. I have so many plans for the new year; I can hardly wait to get started!
