Baked Honey Mustard Corned Beef – This corned beef turns out extra tender and juicy with a sticky sweet honey mustard glaze on top. Make more than you think you’ll need, because even the pickiest eaters might be asking for seconds!
Irish Colcannon – Buttery mashed potatoes with bacon and cabbage is an unforgettable combination. There has never been a single bite leftover when I make this dish.
Reuben Soup – Corned beef, sauerkraut and swiss cheese combine all the flavors of your favorite Reuben sandwich in a steaming bowl of soup.
Corned Beef Breakfast Hash – Corned beef, red potatoes and cabbage create a breakfast skillet that I look forward to all year long. I’m always tempted to make an extra roast, just for more leftovers!

My wife made the corned beef for our annual St. Patrick's day dinner. The best corned beef I have ever eaten. The only problem the recipe calls for a 3 or 4 lbs corned beef and there is no way you'll have leftovers and with as good as this corned beef is you'll want leftovers.
