Copa di Pimm’s cocktail is a refreshing twist on the popular Moscow Mule. A splash of limoncello and Pimm’s adds a spicy, slightly sweet, citrus flavor to the gingery cocktail.
While I was in Albuquerque over the holidays, my sister and I went to dinner at Scalo, one of our favorite restaurants. We tried the Copa di Pimms cocktail and really enjoyed it.
So, naturally, the next time we got together, we decided to try to recreate it at home. It turned out wonderfully and we liked it even more than the original.
Ever since I tried a Moscow Mule last year, I’ve had a thing for the ever so popular non-alcoholic Ginger Beer. It has earned a permanent place in our refrigerator.

Copa di Pimm’s
Ingredients
- 1 1/2 ounces Pimm's No. 1
- 1/2 ounce limoncello
- 4 - 6 ounces ginger beer
- Ice
- Garnish: lemon or orange twist and cucumber
Instructions
- Fill a 10 ounce lowball glass halfway with ice. Pour the Pimm's and limoncello over the ice and fill the rest of the way with ginger beer. Stir to combine. Garnish with lemon and cucumber. Enjoy!

I've been trying to think of excuses to buy a bottle of limoncello… now I think I might have a good reason!! I had my first shot of limoncello in Italy where we were told it was a fashionable thing to drink… this was well over 10 years ago now! Off to store to get a bottle!!
