Chipotle and lime marinated chicken kabobs with avocado cream sauce is officially one of the tastiest things we've made so far this year. The bite size pieces of chicken are soaked in a chipotle and lime marinade before being threaded onto skewers and grilled. I served the grilled chickens skewers with a creamy avocado dipping sauce and the meal was a hit with everyone who tasted it.

Over a year ago, my sister told me about this recipe. She told me that my 18 year old niece had found it online and made it for their family. This rapidly became one of their favorite recipes and when I finally had a chance to make it myself, I knew why.

These chicken skewers disappeared in minutes and we never even had a chance to sit down at the table. We wound up standing around the kitchen island, dipping the skewers into the Avocado Cream Sauce just as soon as the meat was cool enough to eat. My whole family votes this recipe two thumbs up.

Chipotle Chicken Kabobs
recipe lightly adapted from Annie's Eats
Yield: 6 servings

Marinade Ingredients:
1/2 cup light olive oil
juice of 2 limes, about 1/4 cup's worth
1 chipotle pepper in adobo sauce, seeded and minced
2 cloves garlic, minced
1 tablespoon light brown sugar
1 teaspoon kosher salt
1 teaspoon chili powder
3/4 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper

2 pounds boneless skinless chicken, thighs and/or breasts, cut into 1 1/2" pieces
Avocado Cream Sauce for serving
Optional topping: fresh cilantro, chopped

Combine all of the marinade ingredients in a small bowl and whisk together. Place the chicken pieces in an airtight container or a large ziploc bag. Pour the marinade over the chicken and seal the bag or container. Turn over a few times to ensure that everything is well coated. Allow the chicken to marinate for 30-60 minutes, or for as long as 24 hours.

When almost ready to grill, soak wooden skewers in water for 10 minutes before threading the chicken onto the skewers. Heat the grill to medium high and generously oil the grates to prevent the meat from sticking. Place the kabobs on the grill and let cook, turning once or twice, until all sides of the meat are slightly browned and the chicken is cooked through.

Serve the kabobs with Avocado Cream Sauce for dipping and sprinkle with cilantro just before serving. Enjoy!

  1. I love recipes that suit the whole family! I find it difficult sorting out dinner for my little family of 4, because it seems like there is always one person who doesn't like something on the plate! I will have to try my critics on this recipe I think!!! It looks delicious!

  5. We made these last weekend. Used boneless, skinless breasts and they were great. The avocado sauce was the big hit. That will be something we will add to other dishes like tacos, enchiladas, as a dip, salad dressing, etc.

  6. What kind of peppers can you use other then chipotle peppers? I am allergic to chipotle peppers?

    1. If you're allergic to chipotle peppers, I am guessing jalapeƱos are out as well? I'd use 1-2 tablespoons of the finely minced hot pepper of your choice.

  7. These little kabobs are amazing! I had to broil mine, because our weather is outrageous right now. I adore the avocado sauce, it is something I've been looking for to use with other recipes. This is already a family fave.
