With all the flavors of pumpkin pie stirred into a creamy bowl of oatmeal, this quick and easy breakfast is my current favorite oatmeal. It's hard to beat a hot breakfast that can be on the table in less than 15 minutes!

I couldn't resist topping our bowls with a swirl of freshly whipped cream to make it even more like pumpkin pie. The whole family enjoyed this oatmeal and the kids have requested this again every single day this week; I think I'm safe to say that it is a hit.

{Edited to add: Two years later, this is still my middle son's favorite breakfast. He requests and now happily makes this oatmeal on his own all year long.}

Pumpkin Pie Oatmeal with Vanilla Whipped Cream
Yield: 5-6 servings
(printable recipe)

3 cups old fashioned rolled oats
2 cups water
2 cups milk
1 cup pumpkin puree
1/2 cup brown sugar
1 1/2 teaspoons pumpkin pie spice mix
1/2 teaspoon kosher salt
Optional topping: homemade whipped cream

Combine all ingredients in a large saucepan and bring to a boil. Reduce heat to a simmer and cook over medium low heat for 5-8 minutes, stirring constantly until the oatmeal has thickened. Remove from the heat, portion into serving bowls and top with whipped cream. Enjoy!

  2. I love fall, it's an excuse to make pumpkin pie flavored everything! I whipped up some pumpkin sticky toffee pudding the other day and it may have been even better than traditional pumpkin pie (given I'm not a huge pie person to begin with).

  6. i use steel cut oats and in a croak pot it for 8 hr. makes huge amount...
