Fluffy Strawberry Banana Ice Cream

Fluffy Strawberry Banana Ice Cream - get the recipe at
Fluffy, creamy ice cream filled with strawberries and bananas is the perfect way to cool off this summer. After watching his older brother come up with a great recipe for Sriracha Chicken Dip a couple weeks ago, my middle son informed me that he was going to work on his own "recipe creation."

He came up with a short list of ingredients and we turned it into this ice cream. He had fun mashing the fruits and then watching the machine churn it into the fluffiest ice cream we've ever made. The kids flipped out over this dessert and we all thought it was pretty awesome.

We've made this ice cream several times over the past few years. It's still one of my favorite ice creams for its unique fluffy texture. If popsicles are more your thing, skip the ice cream machine and pour the mixture into popsicle molds for a hand-held treat!

Fluffy Strawberry Banana Ice Cream
Yield: (6) 1/2 cup servings
(printable recipe)

8-10 strawberries, roughly chopped and mashed
2 bananas, sliced and mashed
1/3 cup sugar
1/8 teaspoon fine sea salt
3/4 cup heavy cream
1/2 cup milk
1 teaspoon vanilla

Mash the strawberries until there are no large pieces remaining. Add the banana slices and mash again to combine. There should be about 1 3/4 cups of mashed fruit when you are finished. Stir in the sugar and salt and let the mixture rest for 5-10 minutes to dissolve the sugar.

Add the remaining ingredients and stir to combine. Pour into your ice cream machine and freeze according to manufacturer's directions. Serve immediately for fluffy soft-serve ice cream or transfer to an airtight container and freeze a few hours for a firmer ice cream. Serve with extra fruit on top, if desired. Enjoy!

  7. Both fruits are my favorites, and have been searching for a recipe.
I'm wondering if I could add some either canned pineapple tidbits or
Even crushed pineapple . Dole makes a juice that's called pine, strawberry banana juice.
Do you it would work if I substitute coconut milk for the 1/2 c of milk?
Let me know what you think a very tropical ice cream .
