Tender bites of barbecue chicken, stuffed into a fluffy baked potato with a perfectly crispy skin make these Stuffed Baked Potatoes a perfect meal.

Chicken Stuffed Potatoes

While visiting my sister Jenny several years ago, she made these BBQ Chicken Stuffed Potatoes for us. Perfectly simple, filling, and as easy as you can imagine, we ate them with enthusiasm. I knew right away that I’d be adding BBQ Chicken to my list of stuffed potato recipes to make.

Little did I know that this would rapidly become one of our family’s favorite meals.

Whether it’s a last-minute use for leftover chicken, or the reason we swing by Costco to pick up a rotisserie chicken for dinner, these BBQ Chicken Stuffed Potatoes are a meal we happily eat at least a couple of times a month.

Perfect Baked Potatoes

First, let’s talk about these potatoes. These are PERFECT baked potatoes.

I’ve learned over the years that all baked potatoes are not created equal. I’ve had baked potatoes that knocked my socks off and baked potatoes that left something to be desired. These stuffed baked potatoes are definitely the former.

The crispy skin and fluffy potato inside will have you enjoying each and every bite. All you need is a drizzle of oil and a pinch of salt. Let the potatoes roast while you read a book or take a nap.

When you’re ready to eat, warm the chicken with your favorite BBQ sauce, split those potatoes open, pile the saucy chicken onto them,  and dig in. Once the potato is gone you’ll end up scraping your bite to get every last bit of barbecue flavor.

Serve the meal on paper plates like you’re at a real barbecue and you’ll have almost nothing to clean up. (How great does THAT sound?)

This meal is made so easy by the fact that everything aside from the potatoes is ready to eat.

For an ultra-fast and easy meal, use store-bought barbecue sauce and pick up a ready-made grocery store rotisserie chicken. I’ve made BBQ Chicken Stuffed Potatoes plenty of times that way and it’s delicious every time.

This recipe also tastes incredible with homemade barbecue sauce. Sweet and Spicy Homemade Barbecue Sauce and Tangy Memphis BBQ Sauce are some of my favorites to use in this recipe.

Whipping up a batch of homemade sauce is well worth it since you can store it in the fridge and use it in tons of different recipes. Make the sauce in advance to save yourself time (and dishes) the day you’re baking your potatoes.

The same goes for the chicken. BBQ Chicken Stuffed Potatoes are always at the top of my list for ways to use up leftover chickenSlow cooked, baked or pan-fried chicken leftovers are all delicious warmed with barbecue sauce and then stuffed into perfect baked potatoes.

As I mentioned before, sometimes we also stop and pick-up a Costco rotisserie chicken when the craving for Chicken BBQ Stuffed Potatoes strikes. I use the meat in this recipe, then save the bones and extras for Homemade Chicken Stock so nothing goes to waste.

The potatoes are delicious served with just the bbq chicken, but my family likes to add classic baked potato fixings on top too.

Cheese, sour cream and chives are fabulous additions along with an extra side of sauce for those who can’t get enough barbecue goodness.

These Baked Potatoes stuffed with chunks of barbecue chicken are a favorite!

Chicken Stuffed Baked Potatoes

  1. Preheat the oven to 350 degrees. Scrub the potatoes to remove all dirt and then rinse and dry thoroughly. Poke several holes into each potato with a fork and then place them on a baking sheet. Drizzle the potatoes lightly with oil. Generously sprinkle each potato with salt and then place in the oven. Bake for just over an hour, until fork tender. They should be crisp on the outside and tender inside.
  2. When the potatoes are almost finished baking, place the cooked and chopped chicken in a medium-size saucepan and cover with barbecue sauce. Stir gently to combine and warm over low heat until steaming hot, this should take less than 10 minutes. Add more sauce as desired, until the chicken is as saucy as you like.
  3. When the potatoes are finished, remove from the oven and slice each one down the center and fluff with a fork. Top each potato with the barbecue chicken mixture. For ease of serving, you can also simply chop a baked potato onto a plate and top with the chicken. Garnish with cheese, sour cream and chives as desired.

When I tell you BBQ Chicken Stuffed Potatoes are one of my favorite meals, I’m not kidding. It’s almost too simple to be as tasty as it is. I will owe my sister Jenny for this recipe for a long time.

I might as well also thank her for introducing me to Lebanese Beef and Green Beans, Chipotle Chicken with Avocado Sauce, and Challah Bread Pudding with Kahlua Cream Sauce.

Come to think of it, Jenny can also be credited for at least half of the cocktail recipes here. Maybe she should start her own blog one of these days?

Notes

FREEZER MEAL: This is a great recipe to double or triple if you have extra chicken. The chicken and sauce can be cooled completely and then transferred to a freezer-safe ziploc bag or airtight container. Thaw completely before reheating. Cook and stuff the potatoes as directed above. The chicken mixture works great with these nachos as well.

I would also like to thank your sister for introducing you to Lebanese Beef and Green Beans. And I’d like to thank you for introducing it to me.

350 degrees for 1 hr is incorrect. Sincerely makes me doubt validity of blog. 350 for 1 he leaves you with almost raw potatoes. 450 is correct.

Please revise. I had to cross reference other pages to get correct baking temp, which I had forgotten.

Feel free to bake your potatoes however you like, Rachael. 350°F turns out perfectly every time for us and that is accomplished in about an hour, give or take a few minutes. 425 will cook in about 45 minutes and result in a crispier skin, if that is your preference. 350°F for an hour is our favorite method though.

Awesome base recipe! I first boiled 2 chicken breasts in a brine mixture and simmered for 30 minutes. Then I shredded them and added the barbecue sauce. I kept it warm while the potatoes baked. I had enough chicken for 8 potato halves, so they ended up being very substantial for my family. I re-baked the potatoes and chicken mixture for about 10 minutes, then added shredded mild cheddar cheese on top, then baked for another 5 minutes. Once the cheese melted we added sour cream and chives when plating. Amazing idea! Thank you so much for the inspiration!!4 stars

Great recipe for leftover chicken! Also, Alton Brown recommends cooking baked potatoes for one hour at 350 as well. I would trust him over Rachael any day. Thanks for posting!5 stars

I made this last night for my wife and son and they both gave it two thumbs up. I warmed the refrigerated chopped chicken in a bit (1c or so) of stock and when hot, drained the stock, added BBQ sauce until it looked sauced but not swimming, added some favorite seasonings and let everyone build their potatoes. We had leftover chicken and I only used the breast meat (it was a heavy Costco chicken).5 stars

I always bake my potatoes at 350 for an hour and they are perfect. I used rotisserie chicken which makes it easier. Great recipe! Everyone enjoyed it.5 stars

I put my potatoes in a crockpot on low and let them cook while at work. Then complete the other steps as stated. I love these potatoes!5 stars
