Hot Brown Rice Cereal with Almonds and Golden Raisins recipe by Barefeet In The Kitchen

Rice cereal has never been my favorite food, however leftover rice warmed with milk and brown sugar has long been a favorite breakfast for my children. When I saw this recipe in Everyday Food, I knew that my boys would love it. What I didn’t know was that I would think it was delicious as well!

I’ll go ahead and mention here that we rarely eat brown rice. (I made a pot of it a few nights ago, just so that I could try this recipe the next morning.) I adore Jasmine rice and nothing else even comes close in my opinion. However, this brown rice?

I could eat this combination every day. It was just barely chewy, with a nutty flavor in addition to being sweet and softened from simmering in the milk.  Topped with raisins and nuts, this was a hit with all the kids.

Hot Brown Rice Cereal with Almonds and Golden Raisins

Recipe barely adapted from and with thanks to Everyday Food
Servings: 3 -4 servings

Ingredients 

  • 3 cups cooked brown rice
  • 2 cups milk
  • Scant ¼ cup maple syrup
  • Dash of nutmeg
  • 3/4 cup sliced almonds
  • 1 cup golden raisins

Instructions

  • In a medium pot, combine the rice, milk, syrup and nutmeg. Bring to a boil and then reduce heat to medium. Cook, stirring continuously for about 3-4 minutes or until slightly thickened. Divide between 3-4 bowls and top with the almonds and raisins. Enjoy!

    This has really got me thinking – I eat oats for breakfast everyday and would love some variety. Do you not worry about using old rice though? I've heard you should never keep left over rice.

    This is a great recipe for me because I love brown rice, but no one else in my house does so there are always leftovers. I buy a brown Jasmine rice at my Asian Market and its sooo much better than regular brown rice.

    Nice difference from oatmeal porridge, I opted out of the maple syrup [because I didnt have any in the cupboard] 🙂 and it still tasted great
