We have had so many fresh bunches of baby carrots from our local farmer’s market lately; I’ve been roasting them at least once a week. A while ago, my friend, Kara, mentioned adding cayenne to the spices when she roasts carrots and I couldn’t wait to try it.

They weren’t really spicy, but the cayenne brought out a deeper flavor. The whole family enjoyed these carrots.

Roasted Carrots with Garlic and Onion

Servings: 9 -12 servings

Ingredients 

  • 1-2 pounds new baby carrots ends trimmed to 1" and scrubbed well
  • extra virgin olive oil
  • new baby onion or 2-3 green onions sliced very thin
  • 2 large cloves garlic minced
  • kosher salt to taste
  • cayenne pepper to taste

Instructions

  • Preheat the oven to 400 degrees. Place the clean carrots in a large mixing bowl and drizzle with oil. Toss with your hands to coat thoroughly. Add the onions, garlic and spices. Toss well to coat the carrots with the little bits of onion, garlic and spices. Spread the carrots across a silpat lined or foil lined baking sheet and top with any onions or garlic remaining in the bowl. Sprinkle with additional salt if desired.
  • Bake for 15 minutes, or until the carrots are tender when pressed with a fork. Enjoy!

    I never know what to do with carrots so I rarely buy bunches of them…but I'm always tempted to when I see them at the farmer's market looking so cute! This is what I'll have to make next time I come across them!

    I've never really been a cooked carrot fan.. I love them raw but I have memories of mushy carrots when I was growing up. With that said.. you put a plate of those in front of me and I have a feeling I would turn into a huge fan!!

    Some of my sons don't love cooked carrots for some strange reason. They must have been kidnapped by aliens and brainwashed when they were babies. I love them cooked any way at all, because they're so sweet and flavorful!

    I used to be a fan of steamed veggies… Since I discovered oven roasted veggies, I don’t have much use for the steamer. I really love these roasted carrots.
    Not to mention; Broccoli, Cauliflower, and Brussels sprouts, basically using this same recipe.5 stars
