Roasted Green Beans

Roasted Green Beans recipe by Barefeet In The Kitchen

Did you know you can roast green beans? I have no idea why it never occurred to me before now, but they are amazing when roasted. I've been roasting almost all my vegetables over the past couple years, but green beans were never on the list. I finally tried it a couple weeks ago and they were delicious. Roasting vegetables brings out so much more flavor than other cooking methods. This time of year especially, I love the excuse to turn on the oven and enjoy my vegetables this way.

Roasted Green Beans

1 lb fresh green beans, I used very small petite beans
Extra virgin olive oil
Kosher salt, to taste
Fresh cracked salt and pepper, to taste

Preheat the oven to 400 degrees. Rinse the green beans and pat dry. Place them in a bowl and drizzle with olive oil. Sprinkle liberally with salt and pepper and toss to coat. Spread the seasoned green beans across a large baking sheet and roast for about 12-15 minutes, stirring once about halfway through. They are ready to eat when they are bright green and crisp tender.

  3. I also roast green beans with olive oil, seasonings, and add lemon zest and pecans for a fancy / company version. Yum!

  5. I have not tried roasting green beans either and for the life of me I can't figure out why. I definitely agree with you that roasting any vegetable gives it a superior flavor. Especially cauliflower I have found. I don't even like cauliflower and thought I never wanted to eat one again until I read a blog and roasted it. Now I LOVE IT roasted! Who knew?

  6. Interesting! I also love roasting asparagus, zucchini, cauliflower, and of course butternut squash, but I did not ever think of roasting green beans...!

  9. They are great roasted! I saute sliced shallots in a teaspoon of oil, remove from pan and set aside, add pine nuts to pan and toast them. When beans are done, toss with shallots and top with pine nuts. YUM! Roasted green beans beats the traditional dish with a can of soup and onion rings for holidays!!!
